A top ten in my house, this tender crumbed dark chocolate cupcake shines even more when it is coupled with a creamy peanut butter mousse. It’s also a cupcake that I save for serious bribery when I need it.
What does one do when you are only three years into motherhood and you have an ankle biter in Target ready to have the kind of fit that would bring King Kong to his knees? You bribe him and stare down the judgmental glares of other well seasoned moms, or the worst, non-mother glares.

Neapolitan Cupcakes ~ July is national ice cream month, so I should have made Neapolitan ice cream, but instead this beloved ice cream flavor is making a jump for a cupcake liner.

Neapolitan Cupcakes
Trust me, you will love this flavor as a cupcake. I have to admit this was not the easiest cupcake to pull off.
Why was this so challenging? Three words, Dear Bakers: Varying batter density.
After trying to layer the batter horizontally then vertically and ending up with a marbled cupcake-I relented. So while I failed at acheiving the classic Neapolitan layered look. Banana Caramel Cupcakes ~ If you love bananas, banana bread and caramel sauce, you will go crazy for this cupcake that masquerades as a cake.

Banana Caramel Cupcakes
I made this just a few weeks ago and did not have any luck keeping them around. We ended up eating them all before they could be photographed.
This time around I gorged on three of these little babies straight out of the oven and set aside a few for the family, then hid the rest to photograph.
Subtly sweet and flavorful on its own, my family enjoys these Banana Caramel Cupcakes undressed and plain, as much as they liked them filled and frosted.
In fact, we love this recipe so much I no longer make banana bread. This recipe has all the flavor of traditional banana bread, but is so much lighter in texture and weight. The only downside of making them as cupcakes is –I have no self control and end up eating two to three at a time. » Read the rest of this entry «
