Classic Vanilla Cupcake and Vanilla Buttercream Frosting

You know I can almost never resist trying a new recipe that claims to be the best of something. Often times they aren’t the best, just different. Then there are those that really are amongst the best and when they are, I tend to flip those into what I categorize as a classic. By classic, I mean those go-to, no-fail, always-ready-to-impress desserts.

This classic vanilla cupcake and vanilla buttercream frosting is one of them.

The recipe is from Better Homes and Gardens. As I said, it meets all the criteria for being deemed classic. Most times I make it straight up without a lot of fuss, but on occasions when I need something whimsical for an event, this is what I end up with: the classic vanilla cupcake dressed up with some decorative cupcake liners and Washi tape flags.

Think of the recipe as your blank canvas. Dress it up, dress it down, color the frosting, theme it out, pimp it out, sprinkle it with sugar, dust it with glitter, cover it in baubles—you get the idea—get as crazy you want to!  Just don’t go altering the recipe too much because it’s perfectly good the way it is.     These cupcakes are so simple and gorgeous! I looked forever for a classic yellow cake recipe and finally found one from a super old BHG cookbook. It’s my go to now, but I totally need to try this one! 🙂

    I think you said it just perfectly about how the “best” recipes are really the classic ones we reach for time and time again. Like Great-Grandma’s stuffing at Thanksgiving or Grandpa’s Cowboy Coffee Cake for Christmas morning breakfast. However, my family never passed on a classic vanilla cake recipe, so it looks like these just might become the one — especially if they always come with such cute liners and decorations!

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
