Donut Cupcakes

This year when it’s time to celebrate your little one’s birthday, let’s get Get Your Betty On with these fun donut cupcakes made easy with Betty Crocker. You know, the iconic red box with spoon logo that’s been helping moms and dads all over make every occasion from birthdays and more, delicious and special.

Not every one has time to make an elaborate, highly decorated cake, but everyone can make a homemade cake that’s just as special. What is for everyone–is making the event you plan special and hopefully as stress-free as possible while you’re planning and preparing it.

To help you along, I’m sharing some of my best tips for hosting a no-fail birthday party.

  1. Find your comfort zone and know your limitations. Don’t overshoot for something too elaborate, know your resources, ie. time, budget, details.
  2. Know your audience. Make sure your planning and entertaining is catered towards making them at ease.
  3. Share, delegate and ask for help where you can. There’s no shame in this and it will really let you focus where your skill set is best served.
  4. Do as much as you can ahead of time, ie. set the table, create your music playlist, prepare foods that can be made ahead of times.
  5. Most of all, take a breath. Have fun, or else—what’s the point?

Keeping those few pointers in mind, you’ll be able to make any party a success no matter how you skin the theme. Because from there it’s just a matter of connecting the dots from color scheme, to party favors, types of food and of course-the cupcake or cake construction and styling.

For today, I’m keeping it simple with a Confetti Donut Cupcake. To start I used Betty Crocker’s confetti cupcake mix. Then I frosted them with Betty Crocker’s Thick and Creamy frosting and between the frosting is a mini donut made with the cupcake mix and dipped in some melted frosting.

Don’t they look fun and festive? The best part – there’s nothing complicated in the construction of these. It’s a no-fail recipe.

    I love these! They are super colourful and fun, you certainly wouldn’t guess they are from a packet mix. Betty Crocker is definitely one of the best pack mixes out there, their Chocolate Chip Cookies are divine!

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
