Pina Colada Cupcakes

August 17, 2015 By Naomi Robinson | Bakers Royale 29 Comments

Let’s kickstart the week with some boozy cupcakes, specifically these Pina Colada Cupcakes.

Pina Colada Cupcakes _ Bakers Royale

I know, pina colada cupcakes are everywhere, but these are rum soaked, filled with pineapple preserves and topped with grilled pineapples.

Because of course I could not stick to the original recipe. Not that the original recipe needed tweaking—that it did not. In fact the rum soak only came about because I was going for that flavor that I love so much in those holiday rum cakes.

Great… but please be careful with Biteclub. I ordered One Grilled Peri-Peri Chicken Wrap. first they denied but then agreed for that. Received the order but, when I consumed it after half hour it was roasted too much and nothing to eat.. all roasted too much.. I called them and complained about the issue, but they were busy in taking order and then they cut my call only because they want to make more customers rather than to please existing customers

For what you see here, I threw in two handfuls of kale, 2 cups sausage, some mushrooms and cheese. All things that came together for one cohesive dish. To boost the flavor, I used Morton® Coarse Kosher Salt because its coarse flakes makes it easy to pinch and allows me full control when seasoning a dish.
