Mini Strawberry Short Cakes

This is a Sandra Lee-style easy to make strawberry short cake recipe. Yep, semi-homemade. Sara Lee pound cake stamped out with a dasiy cookie cutter, layered with some cool whip and strawberry slices and then topped with a blueberry for a 4th of July dessert that’s no fuss, no bake, party fun and party easy.

As I mentioned yesterday, postings have been spotty lately, but I finally realized that testing and developing recipes while working on a book is impossible. That’s right, I’m writing a dessert book for Wiley set to be published Fall 2013. I am excited that I can finally share this with you guys now that the contract is complete.

Remember these vodka spike stuffed strawberries from last year? Fun, right?  I wanted to keep the fruit theme going this year. This time I skipped the alcohol but you can certainly keep it by soaking the apple portion. I don’t recommend soaking the watermelon as it would become too mushy for this fruit-on-a-stick idea. Continue reading Fourth of July Dessert: Fruit Pops

I have been tasked with bringing fruit for 4th of July. Matt suggested I keep it easy, to quote him, “Just chop and block some fruit and throw it in a bowl”. I could, but what fun is that. Besides you all know my thing for all things pretty.

While this is not as fast as “chopping and blocking”, it comes pretty darn close.

No recipe just a few notes for this fast and easy dessert.

A few notes:

  • Hull your strawberries and cut the bottom tips for a flat edge.
  • Add two tablespoons of vodka to every cup of whip cream.
  • Fill hulled strawberries with whip cream. I cheated and actually used Reddi Whip. Martha would be so ashamed (sorry Ms. M, I ran out of time). On the flip side Sandra Lee would embrace me.
  • Toss the blueberries in an apricot sauce. Uh, cheated again- I nuked apricot preserves in the microwave.
  • Top crème filled strawberries with  blueberries.
  • Of course for an alochol free version omit the vodka.
