Custard bars with summer berries-yeah, this one will see a few more forms as I play with different fillings. For now think soft and creamy custard center injected with bright berries for a punch of fruitiness that’s crusted with Christina Tosi’s famous cake mix crust.

Remember when I made Momofuku’s Ooey GooeyButter Cake Bars, but added blueberries to it to cut the sweetness? Of course the original recipe is great as is, but for my own preference, I wanted something little less sweet and a little more firm without having to freeze it. So for this recipe I started with the crust, but went with my own recipe for the filling.

Blueberry Muffin Cookies

I should clarify, that’s a blueberry muffin cookie with a few raspberries. I added the raspberries for a bright shot of berry tartness that the blueberries alone could not provide. Remember awhile back when I was flipping classic desserts into cookies, eg. Cinnamon Roll Cookies, Banana Bread Cookies, Coffee Cake Cookies, Pecan Pie Cookies, Carrot Cake Cookies. And no, these are not muffin tops . The crumb is softer and these Blueberry Muffin Cookies are missing the hardy dome exterior of a muffin top. But I did keep the streusel topping for a little bit of crunch and an extra added kick of sweetness. To give the body a more cake-like texture I added in some cottage cheese. Oh, yes I did. I could have used sour cream and you can too if you don’t have cottage cheese on hand, but I prefer the cottage cheese as it seems to provide more moisture and a denser crumb.

Okay, so not my best work in terms of visual execution on the red, white and blue striping (ahem – purple, red, and pink?)  but failed coloring aside, the flavor is spot on for this Fourth of July popsicle enhanced with a bit of Happy Hour for an adult treat. To keep this kid friendly, just omit the alcohol and fun for all can be had on a stick!  And what isn’t more fun on a stick?
