Mini Strawberry Short Cakes

This is a Sandra Lee-style easy to make strawberry short cake recipe. Yep, semi-homemade. Sara Lee pound cake stamped out with a dasiy cookie cutter, layered with some cool whip and strawberry slices and then topped with a blueberry for a 4th of July dessert that’s no fuss, no bake, party fun and party easy.

As I mentioned yesterday, postings have been spotty lately, but I finally realized that testing and developing recipes while working on a book is impossible. That’s right, I’m writing a dessert book for Wiley set to be published Fall 2013. I am excited that I can finally share this with you guys now that the contract is complete.

Strawberry Shortcake Bars

I couldn’t decide whether or not I wanted to make a regular strawberry cheesecake or strawberry shortcake, so I went with a combination for what you see here. It has a cheesecake filling with a little dry yellow cake mix and puréed strawberries. Along with that I threw in a surprising ingredient, a banana, which I discovered helps create a super creamy cheesecake filling. Then I sprinkled the filling with some strawberries and finished it with a streusel topping

Last week was real light on the posting since I was busy taking care of a kid who came home sick and feverish. Honestly, he never complains and since he had intermittent spurts of energy, I really thought he was faking it to get out of going to school for the next day.

Strawberry Bread

Strawberry Bread ~ Breakfast just got better with some sweet buttermilk and fresh organic strawberries.

Creative in concept, simple in execution-I wish I had thought of this Strawberry Bread recipe myself. I am admittedly besotted with it. I made this for the first time the other week and two days later made it once more and have been enjoying it with my morning coffee for the last few days.

I love the taste of buttermilk and in this recipe it leaves behind a subtle hint of its presence in the flavor while helping to bind the texture into a tight moist crumb. Releasing bits of juicy sweetness, the strawberries take on a gusher like quality with every bite to tie everything together. Continue reading Strawberry Bread
