Every year for Thanksgiving I make these truffles along with my pumpkin pie. They are perfect for light dessert eaters who want just a nibble of something sweet and a rich treat for others who catch there second eating wind when the word dessert is mentioned . .. ahem, I’m  including myself in the latter.

I love the taste of Frangelico and love how it pairs with chocolate even more. In fact I love it so much I’ve kept this truffle simple in design, by that I mean, no rolling these truffles in finely ground hazlenuts and no heavy dusting of cocoa powder. I wanted the  flavor to come through uninterrupted.

Up until now I’ve never made a stuffed cookie. It was only after I saw Jaime of My Baking Addiction’s Rolo Stuffed Chocolate Chip Cookie that I fell in love with the idea of a stuffed cookie.

And since I had some left over filling from my German Chocolate Cake and being one who hates to waste, this was the perfect solution—inspiration meets frugalness.

Going for a two-fer baking session, I was also testing a new recipe of my own for chocolate cookies. So there I was anxiously standing in front of the oven, flipping the light on and off and crossing my fingers the cookies were not spreading into flat discs, or worse, explode into a messy disaster.

Luckily, neither happened, they came out deep and rich in chocolate flavor with a nice chewy edge and a cake-like crumb. Continue reading German Chocolate Cake Cookies

Small in size, large in flavor and forever popular in my house, I decided to flip the standard  German Chocolate Cake into minis.

Yes, I know I’m a mini fanatic. Although a little more work than making one cake or cupcakes, I much prefer mini cakes for their curb appeal. Aside from that, I like the even bite of filling and frosting rather than the gob of sugar sweetness on the top of a cupcake. I also prefer serving a fully decorated mini cake rather than a slice. Call me a nutcase, I call it packaging. I’m a sucker for well designed packaging and that includes cakes.
