4th of July Dessert: Mixed Berry Cake

Since 4thof July is around the corner, red, white and blue desserts are an order, right? They are if you write for this blog, so here you go – now serving a 4th of July dessert recipe by way of a rustic mixed berry cake. That’s a rustic cake mixed with some homemade salted almond meal, stuffed with summer berries and then crowned with a cloud of whip cream and a pop of color fresh berries.

This is actually one of four, and the second cake, that I’m sharing from my mother-in-law’s birthday. Although for her party I made it with only raspberries and kept it even more simple by finishing it with a light dusting of confectioner sugar. For this post I gave the cake a mixed berry twist for a 4th of July dessert.

Nutella Crunch Ice Cream Pie & Bluberry Pie Ice Cream Pie

Well since I covered ice cream cakes just a few weeks ago, I figured why not ice cream pie, right? It’s fast and easy to make and it has a crust on it–often my favorite part on a pie, and I love having a textural contrast in food.

This is a simple concept with a simple execution. Find your favorite cookie give it a pulverizing whirl in the food processor, press, bake and cool, then fill it up with up your favorite ice cream flavor. For this post I chose a chocolate ice cream base and infused some Nutella in it and then added chopped Ferraro Rochero for added texture, crunch and flavor. As fo the other ice cream pie featured in this post, that’s a Blueberry Pie Ice cream Pie. It’s blueberry pie in a ice cream form with a crisp graham cracker crust for a bite that’s creamy, crunchy and fruity all at the same time.

Cocktail Popsicle: Blueberry Cabernet Cheesecake Popsicle

Have your Memorial Day dessert on a stick. That’s fruit, booze and dessert all in a popsicle and in one bite, er lick! Although, I realized after I began writing this post that I forgot to add in some strawberries or raspberries for a red,white and blue action—dang. But you don’t have to, so either chop up some strawberries/raspberries or puree either one and swirl it in for a festive look.

This week I deviated from my hard-liquored fruit pops for a dessert pop shot up with some Robert Mondavi Wines Private Selection.
