I am the first to admit I’m a weenie when it comes to the weather; anything above the 90’s and lasting for more than two days constitutes a heat wave.

To cope with it and to soothe everyone’s heat induced crankiness in my house I’ve traded in the next few oven baked recipes for some ice cream, sorbet, and Popsicle making.

Cantaloupe, watermelon and honeydew are some of my favorite summer fruit flavors. When they are on sale for a relatively inexpensive price, I have a hard time passing on it so I end up buying in bulk.

A chocolate love fest meets debauchery? Perhaps to some but I love every bit of it.

It started with a simple request for a basic brownie, to quote the requestor, “Can you make straightforward brownie-no candy bar chopped and piled on top, no crushed cookies tucked in the center, no cream cheese top, just a plain brownie?”

As evident by the picture, I’m sure we can all agree I’m not a very good listener-kind of. I did in fact make the brownies as requested for the family and then choc-la-fied them some more with mousse to what you see in the picture.

I usually like my brownie warmed and with a scoop of ice cream. This time around I wanted to try something lighter like a mousse and . . .I may never go back. Okay, a wee-bit of an exaggeration, since I love ice cream.

But what I did like about the mousse was it provided a textural break with its lightness while smoothing out the richness of the chocolate for a more even bite. Continue reading Chocolate Mousse Brownie Bites

Can you tell I love cheesecake yet? Yes, it’s one of my favorite desserts. I love it for the taste and its versatility for being something that can easily go from simple to decadent.

Right now, I’m stuck on a run of no-bake cheesecakes. This one came popping into my head late at night while I was running through my Christmas cookie list. Yep, I’m already planning and mapping out Christmas baked goods, crafts and presents.

Simple in design all you need for this recipe is some butterscotch chips, chocolate chips, a handful of Whoppers and some gelatin. Don’t let that last mentioned ingredient scare you. Gelatin is very easy to work with. Continue reading Chocolate Butterscotch No-Bake Cheesecake
