Ah, yes, my mini cheesecake craze continues. Okay, lets just agree I have a tendency for OCD-like behavior. The more I blog the more it becomes apparent to me that there just might be a connection between me and that three letter acronym.

Either way I’ve decided to own it, embrace it and love it. That being said, I’ve have about another dozen of these little mini cheesecakes recipes to work out and many that are getting a little bit crazy in design (more on the latter to come).

For now, this latest one combines one of my favorite cake flavors. And since I wasn’t able to add a frosting layer with cherries tossed in Kirsch, I added the Kirsch to the cherry cheesecake portion. Then I threw a large cherry on top for a fun look. Continue reading Mini Black Forest Cheesecakes

Can you tell I love cheesecake yet? Yes, it’s one of my favorite desserts. I love it for the taste and its versatility for being something that can easily go from simple to decadent.

Right now, I’m stuck on a run of no-bake cheesecakes. This one came popping into my head late at night while I was running through my Christmas cookie list. Yep, I’m already planning and mapping out Christmas baked goods, crafts and presents.

I love it when an idea materializes the way I envision it. Trust me, my kitchen hands have experienced many failings from concept to reality. This was a good one for me though, so I can’t wait to debut this at my Academy Award get together and then repeat it for my girlfriend’s dessert bar at her wedding in May.

So what can make a fast and easy dessert better? A no-fuss pretty dessert that is less than 3o minutes in prep time.

To make these mini sizes you will need Chicago Metallic’s Mini Cheesecake pan. If you don’t have this pan, small cake rings will work just as well.

What to do if you are without both? Here’s a DIY I read on another site (sorry, can’t remember who to credit for this one. If someone does, please let me know.). Take some empty soda cans or Redbull and Starbucks Espresso Shot cans for a smaller diameter, cut the ends off with a mini saw or serrated knife and trim to desired height and you are good to go. Although this recipe won’t go in the oven, the aluminum cans work just fine for recipes that do. Small word of caution: The edges maybe a bit sharp, so use with care.
