Grab your favorite fruit, cookie cutter and some popsicle sticks and get ready to be the neighborhood hero.

These are really so simple and the idea came to me when I was making fruit kebabs for my little guy and his friends.  What kid doesn’t like a popsicle, right? Of course my 3-year-old liked them even more because he helped make them and was so proud to show them off to his buddies.

So did I fool the other kids? I’m not sure, but not one of them balked or blinked when they realized it was fruit and not the traditional sugar laden variation of a popsicle. Although trying to pull that off with kids over the age of 3 might be a little tougher.

A few notes:

  • Use metal cutters over plastic cutters. You need a thinner sharper edge that metal ones have over the plastic variations.
  • You can pre-cut the fruit into their chosen shapes, but insert the popsicle sticks prior to serving or they will become soggy.
  • Avoid overly ripe fruit, as they will get mangled when you try to cut them with a cookie cutter.
  • Fibrous fruits such as mangoes and pineapples do not work well as they require the sharp edge of a knife for cutting.

This is a healthy recipe that will win over even those who refuse to eat raw vegetables unless they are dunked in ranch dressing. . . Ahem, not mentioning any picky eater names here.

In order to disguise the fact that the vegetables are raw, I dice them into tiny bits to mitigate the crunchy raw texture. Continue reading Light and Healthy Summer Pasta Salad

Banana Caramel Cupcakes

Banana Caramel Cupcakes ~ If you love bananas, banana bread and caramel sauce, you will go crazy for this cupcake that masquerades as a cake.

I made this just a few weeks ago and did not have any luck keeping them around. We ended up eating them all before they could be photographed.

This time around I gorged on three of these little babies straight out of the oven and set aside a few for the family, then hid the rest to photograph.

Subtly sweet and flavorful on its own, my family enjoys these Banana Caramel Cupcakes undressed and plain, as much as they liked them filled and frosted.

In fact, we love this recipe so much I no longer make banana bread. This recipe has all the flavor of traditional banana bread, but is so much lighter in texture and weight. The only downside of making them as cupcakes is –I have no self control and end up eating two to three at a time. Continue reading Banana Caramel Cupcakes
