Melon and Cucumber Mint Salad

I can’t believe the kids are out of school! You know what that means? Hair-pulling, teeth grinding and summer boredom on repeat.

Even though it sounds like I’m complaining—I’m not. It’s just a fact that three weeks into summer I know I’m going to start hearing, “I’m bored. I have nothing to do.” I’m speaking from experience, and please tell me I’m not the only one that hears this? But you see what I mean about hair-pulling and teeth grinding? I mean, how is that possible when there is a house full of toys, board games, books, all kinds of electronics and a hundred other things to keep a kid entertained?

To keep my wits about me, I’m going to be even lazier than them. Yep, dinner will be comprised of recipes like this one – no cook, no fuss and easy-to-make. Okay, lucky for me, my husband is a food blogger who’s food the kids prefer anyways—so yeah, I get out of cooking alot. And admittedly, if I presented this for dinner, they would all be searching under their plates for the protein and the rest of dinner. This is of course dinner my style, and a side dish for them.

Nonetheless, this is a great recipe you can grab  here.  I did make a few changes like swapping out the honeydew for a Galia and the dill for mint, other than that, everything else is the same.

    I don’t have kids, so I luckily won’t have to deal with the “I’M BORED.”
    And my taste buds definitely won’t be bored by this salad. I’ve been obsessing over fresh fruit and mint lately, so definitely grabbing the recipe! Pinned!

    Haha, my parents sent my brother and I to summer camp every summer. Probably so they wouldn’t get phone calls while at work about us being bored! This salad is beyond boring. It’s beautiful!

    Melon and cucumber and mint and feta all in one big gorgeous salad? I think I could be happy eating this all summer long. Eric’s always been a fan of cucumber and we sort of have our set “cucumber salad” but it’d be so nice to mix things up a bit.

    I’m with you sister. I can’t stand the “I’m bored. I have nothing to do.” talk. . so I put my kids in summer camps. . which at least helps so I can have the mornings to myself and can hold on to some sanity during the summer. I would absolutely devour this for dinner . . and my family would be the same way. . where’s the rest of our dinner?! Beautifully photographed and I LOVE that plate. . so much character!

    This is just too gorgeous for words and I love how simple and summery it is. And PS I am in the same boat with my boys! They can’t be at home for more than a day or two before they start getting itchy and fight. 🙁 Hang in there girl!

    Naomi this salad is gorgeous! So summery looking and refreshing! Your comments about the boys are so funny! I think boys have to have something going every minute or they aren’t satisfied! Between my 2 boys and my husband we can never sit still!

    Well, mine is 2 years ld and he just starts schll in September, so we have to find many activities to keep him busy and also to get him tired. Glad we have a pool in the condominium so he can swim is energy.
    Love the simple and summery combo of this salad, perfect for those super hot days.

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
