Get your spoons ready for the easiest, 3-ingredient ice cream—okay, so it’s not legit ice cream, it’s Italian ice. But I promise you, it’s just as refreshing. And this Italian ice recipe couldn’t be easier!
As an added plus, this is egg free and dairy free, so go ahead—eat up, your bikini won’t hate you.
Well, maybe a little from the sugar, but let’s not nit-pick, because any dessert recipe as easy as this one deserves a place in your recipe collection.
But for those of you who want to quibble over the sugar, try using some agave or honey, just make sure you use an ice cream machine. It needs the churning for the aeration to give it the distinctive Italian ice texture. Otherwise you’ll just end up with sorbet.
Coffee Italian ice
Ingredients
- Recipe adapted from McCormick
- 1 cup water
- 1 cup sugar
- 1 tablespoon McCormick's Coffee Extract
Instructions
- Place water and sugar in a small saucepan over medium high heat and bring to a boil. Reduce heat and let simmer for 10 minutes.
- Remove from heat and stir in coffee extract. Transfer mixture to refrigerator and let chill, about 2 hours. Once chilled pour into ice cream maker and freeze according to manufacturer's instructions.
