Snickers Profiteroles

Yup, I took the classic profiterole and destroyed it with some crazy. Snickers craziness. I turned a classic dessert into a three layer affair with some peanut butter mousse, sliced Snickers and drizzles of chocolate and caramel. I’m sure someone out there is probably pretty appalled that I am even classifying this as a profiterole dessert. But if you can think of a better name-leave  a comment.

So while I started out with the intent of making a classic profiterole, you know pate choux filled with ice cream and then drizzled with chocolate maybe some crushed nuts, but then I figured you guys might be tired of ice cream recipes. From there my mind went to a pastry cream center, but I kinda already did that here (from way back).  Then it occured to me to go completely sideways with this and make it like a mini Snickers cake. Prosecco Floats

The prosecco floats didn’t start out sideways. No, I had the strawberry, blackberry and lemon sorbet scoops contained in their tiny glasses—not beautiful, not perfect, but definitely enhanced and floated by the crisp sweetness of the prosecco. After only a few frames I lost my balance and knocked over the light-bouncing white board and going down with it— the styled prosecco floats.

Beer & Pretzel Cupcakes

Beer and Pretzel cupcakes- fork required. I know it may sound like an odd coupling, but it’s really such an awesome combination. The pretzels give the whole ensemble a saltiness that balances the rich chocolate ganache frosting and also provides a nice crunch to the softness of the cupcake crumb.

If you are not a beer fan you can easily flip these to be chocolate and caramel pretzel cupcakes (see notes). And of course you don’t have to take the time to chop the pretzels into shards like I did. I just love it like that because they look dramatic.
