Chocolate Covered Strawberries Cheesecake Stuffed

Cheesecake Stuffed Chocolate Covered Strawberries

Chocolate covered strawberries are definitely on my top ten Valentine’s dessert  list. They are easy to make, always elegant and always delicious. This time around I wanted to add a simple twist to this classic.

And I had some, okay, a lot of cheesecake left over from a gathering, so I decided to try this with it. What a hit! My friends loved them and it’s now our favorite way to enjoy chocolate covered strawberries.

The cheesecake was a little thick for piping so I added some cream cheese to it and gave it a few whippings in the KitchenAid and it came out perfect for piping consistency.

Naomi – what a great idea for left over cheesecake. I’ve made cheesecake stuffed strawberries before but never with dipped strawberries. Chocolate makes everything better right? =)

Those look scrumptious! What a wonderful little treat. It definitely eases the guilt of other super rich desserts (if restraint is not an issue)

I bet in a rush one could even buy a store made cheesecake and mix it up to make it better for piping… no one would ever have to know!!!! (coming from the girl who can’t bake!)
