Black and White Brownie Bars – The  crème de la crème of brownie bars. These brownies have a moist  fudgey inside and a chewy outside, add the silky cream cheese layer and you will be reaching for your eating pants.

Strange as it may sound, I don’t usually eat too many of my sweets once finished. After tasting the batter along the way, nibbling a corner as it comes out of the oven and then a second nibble once cooled—I pretty much have my fill of it. But with these, the chocolate and cream cheese pairing intoxicates me and my OCD inclination to finish what I start surfaces. So as usual from oven to mouth, I was third of the way through the pan when my three-year-old reminded me we don’t have sweets before dinner—Yep, thanks, Buzz Killington. 

These are so easy and so good; it may just become your go-to brownie recipe. 

A few notes:
• These are terrifically easy to make. I generally use a scale for most baking to measure everything out, but this recipe is pretty forgiving so you can bypass the scale on this one.
• The lattice top is accomplished by placing 1 cup of batter in a pastry bag and piping it onto the cream cheese topping with a #3 tip.
•  I made these just the other day and piped a shamrock for every cut square instead of the lattice and it turned out super. If you choose to do a motif, don’t forget the batter will expand on top of the cream cheese while in the oven.
•  My secret to making this one of the best brownies: Scharffenberger’s Cocoa Powder. It packs a nice mellow chocolatey flavor without overwhelming the cream cheese and the texture of the brownie.
•  If you forget to soften your butter, melt the stick ¾ of the way through in the microwave. Oddly, this doesn’t seem to affect the recipe.

Mexican Wedding Cakes

Mexican Wedding Cakes – Loved by many from around the world this cookie’s a.k.a depends on where you are from and its nut flavoring. Make them with walnuts and they are called Russian Tea Cakes; throw in some almonds and you have Viennese Crescents; if you use pecans as I did, you will have Mexican Wedding Cakes.

Over the years Mexican Wedding Cakes have been a steadfast staple in my cookie swap parties. Reason being- when placed alongside its cookie counterparts these little round cakes usually come out on top with the most compliments. Packed with a nice nutty punch of flavor the sweetness of the cookie is subtle and the texture has a nice crumble when you bite down on its dome. If you’ve never had one, it’s like having a cookie implode in your mouth.

Aside from the obvious yum factor, Mexican Wedding Cakes are terrifically easy to make and  technically forgiving, meaning there isn’t much chance the dough will become over worked and since they are shaped as balls it is unlikely they will melt into flat round patties.

A few  notes:

  • Toast your nuts first. The heat draws the oils out and gives the cookie a deep nutty flavor.
  • Make the dough and refrigerate overnight or for a minimum of two hours. The refrigeration keeps the butter fat binded while you work the dough, allowing for even baking, and more importantly, it will help your cookies keep their shape.

I love it when an idea materializes the way I envision it. Trust me, my kitchen hands have experienced many failings from concept to reality. This was a good one for me though, so I can’t wait to debut this at my Academy Award get together and then repeat it for my girlfriend’s dessert bar at her wedding in May.

So what can make a fast and easy dessert better? A no-fuss pretty dessert that is less than 3o minutes in prep time.

To make these mini sizes you will need Chicago Metallic’s Mini Cheesecake pan. If you don’t have this pan, small cake rings will work just as well.

What to do if you are without both? Here’s a DIY I read on another site (sorry, can’t remember who to credit for this one. If someone does, please let me know.). Take some empty soda cans or Redbull and Starbucks Espresso Shot cans for a smaller diameter, cut the ends off with a mini saw or serrated knife and trim to desired height and you are good to go. Although this recipe won’t go in the oven, the aluminum cans work just fine for recipes that do. Small word of caution: The edges maybe a bit sharp, so use with care.
