Banana Bars with Rum Frosting

Got spotty bananas?  I’ve got you covered with this 30 minute Banana Bars recipe. It only takes 10 minutes to throw together and not much longer to eat the whole pan.

Seriously, I could have polished this whole thing off in one sitting—no lie. I’m definitely going through the golden eating phase of pregnancy. So much so, that I’ve been eating ice cream by the pint, cookies by the bag and cakes by the pan. Only problem . . . 

I was just told by my doctor that I’ve gained too much weight. By too much, I don’t mean too much for my current 29 week state, but too much for the WHOLE pregnancy. I’m 7lbs. over my maximum suggested 20lbs. for the pregnancy.

What-the-whaaa . . .I’ve been placed on a prego diet. Wah!

Banana Bars with Rum Frosting

Banana Bars with Rum Frosting

Yield: Yields 24 bars

Ingredients

1/2 cup butter, softened 1 1/3 cups sugar 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 egg 1 cup mashed bananas (about 3 medium) 1/2 cup dairy sour cream 1 teaspoon vanilla 2 cups all-purpose flour 3/4 cup chopped toasted almonds Butter-Rum Frosting

  • 1/2 cup butter, softened
  • 1 1/3 cups sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup mashed bananas (about 3 medium)
  • 1/2 cup dairy sour cream
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 3/4 cup chopped toasted almonds
  • Butter-Rum Frosting

3 tablespoons butter, softened 3 cups powdered sugar 1 tablespoon rum 1 teaspoon vanilla Milk Freshly grated nutmeg (optional)

  • 3 tablespoons butter, softened
  • 3 cups powdered sugar
  • 1 tablespoon rum
  • 1 teaspoon vanilla
  • Milk
  • Freshly grated nutmeg (optional)

Instructions

  1. Preheat oven to 350 degrees F. Grease a 15x10x1-inch baking pan; set aside.

    These look incredible!! What a fabulous idea. I bet I could have finished off the entire tray, too! That rum frosting… I would be slathering that on everything – toast/biscuits/and more!

    I would smack that doctor! We are talking only 27 Lbs – right? I gained over 70 Lbs (yup – seven zero) both times I was pregnant and my Dr never chastised me for it. My first borns 24th birthday is today as a matter of fact! The day I gave birth I lost 40 Lbs just in water and baby. I was a water retaining cow! The rest of it went away in a healthy amount of time. Sure – I did have the appetite of the Gods but – A prego diet?…meh! Here’s to a healthy baby and mama! Bake on baby!!! 🙂

    Haha, when I was preggo I’m also on a preggo diet, more like “eat everything you want” diet. I understand what you’re going through, when I was preggo, i was begging for mercy to have a cup of coffee. But still was not able to take at least one sip of coffee when i was preggo. hehe… Good thing you’re a crazy good baker, you can make everything you want and substitute ingredients with all your heart desire! Good luck on your pregnancy, have a safe delivery. 🙂

    How did you achieve the marbling effect on the cake? The frosting ends up being a single colour, doesn’t it?

This Kale and Sausage Strata is the kind of dish that uses up all those bits and pieces in the refrigerator. This means dig through the crispier and let’s make the most of what’s in there.
