Lemon Meringue Macarons

It seems like lately I’ve been stuck on dark and moody shots. Well today not so much. Today I’m going the opposite way with these brightly shot and brightly flavored lemon meringue macarons.  Sandwiched between the macaron cookies and at the center of the toasted meringue is a burst of lemon curd to give the ensemble a sweet and tart flavoring.

Let’s go random chat style and discuss the latest trend in food styling. Have you heard? It’s smash food. It’s true, smash food is way in. Okay, I lie. There is no such trend. I’m just trying to sell you on my latest styling kick. And let’s not get all analytical  and “heady” about this. Strawberrry Lemonade Trifle

Strawberry season is just beginning here in California, so of course I went strawberry wild and bought a flat. I’m so glad I did, they are perfect – sweet and ripe. For this strawberry dessert I paired it against a light and fluffy lemonade flavored whipping cream.

Vanilla Cupcake Quest for the Best Continues . . . and some Limoncello & Coconut Cupakes

It’s a twofer type of post with a review and recipe. As many of you know I’m still on the hunt for a new vanilla cupcake. This week I tested Cooks Illustrated Vanilla Cupcake recipe. Along the way I decided to also make a cupcake treat using that base. Let’s start with the cupcake ensemble first.

I adapted the cupcake base with some zest. Then I took the traditional lemon curd and turned it boozy with some limoncello and then stuffed it inside the cupcake. To finish things off I crowned the limoncello cupcake with a tall stacking of coconut buttercream frosting and pressed some sweetened coconut into it for added richness.
