Baking Basics Series: Lemon Curd ~ This is one of those useful recipe components that is easy to make and handy to have around. Lemon curd is used in or on many things likes cakes, cupcakes, tarts, pies and scones.

While you can certainly buy it, I prefer to make homemade, especially since lemon is one of my favorite flavors. I love the tartness of fresh squeezed lemons.

This recipe requires everything to be homemade. In other words, using lemon juice from a bottle won’t work. You want the freshness of  real lemon juice and most importantly, the skin is where the majority of a lemon’s flavor comes from. It’s the  zest of the skin that gives lemon curd its punched up flavor and bite. That said, when choosing lemons look for unblemished ones and lemons that are smooth, bright and shiny.

I had originally planned on miniaturizing lemon tarts from Desserts by Pierre Herme not Lemon Meringue Tarts. I ended up scratching that plan, since I couldn’t execute the lemon crème curd. With that, I scratched the pate sucre as well and went with a traditional tart shell, kept the ganache portion and added the meringue for an almost traditional lemon meringue tart.

Luckily, I made a double batch of curd when I made the pear cake, knowing I just may need it for a back-up to this recipe.

Chocolate Lemon Pear Cake

Chocolate Lemon Pear Cake~ What makes up five layers of cake love? Let me tell you: 3 layers of chocolate cake, a layer of lemon curd, a layer of pears and some chocolate ganache in between and all around and you have enough cake love to last a few days.

That is unless you are my son, who a few weeks ago, told me “I don’t like cake”. Well, you have never seen anyone pull a better Linda Blair 360-head turn.

B-l-a-s-p-h-e-m-y.

Deciding not to disown him on the spot, I covered a piece in chocolate cake with buttercream frosting sprinkled on some his favorite M&Ms, and  . . . to no avail. Weird thing is, he likes cupcakes-huh?
Well stubborn is as stubborn does; I pushed the issue once more and decided to bake a cake with his favorite fruit: pear.

And. . . .  once more, to no avail. The kid doesn’t like cake. Why can’t it be brussel spouts that he doesn’t like?! Yeah, I know “bad-mommy-me”.  Go ahead.  But without him, I would have never thought of this cake.

So many thanks to my non-cake loving child and you will be thanking him too because this cake, to put in its correct vernacular (that is according to my friend’s 23-year-old daughter). . .

. . .is ridiculous!
