Low Fat Chocolate Pound Cake

Here you go, the Smash Cake before it was destroyed by a mallet. Can you see what I mean now? As I said the picture is just awful. Ah, well. the cake however is delicious.

It’s everything a pound cake should be in texture and crumb: dense. That’s why to my disappointment when I dropped the cake from the top of a four-step ladder just to see it splatter its life away, it frustratingly did no such thing. It just landed with hardly any damage. Maddening. So can you imagine how much pleasure I took smashing it with a mallet.

Smash Cake

What the holy hell? Well, vision and reality weren’t lining up, so I decided to shoot it as a “deconstructed” cake. Often times I so enjoy the photography, almost as much as the baking, but yesterday—not so much. The result is an expression of my frustration.

Let’s get this out of the way, the cake is incredibly good. And yes, while it may seem like a waste to take a mallet to a cake. It wasn’t. I still have some broken blocks I’ll be snacking on for the next few days. Continue reading Smash Cake

I know you’ve hardly exhaled from holiday baking and here I am pushing a chocolate and butterscotch mousse cake on you. But think of it as me gearing you up for a Valentine’s Day dessert with this six-layer chocolate cake that’s built on alternating layers of chocolate and butterscotch mouse.

For those on detox or diet, bookmark this. For the rest of us, oh my gawd, let’s talk about this crazy good cake. The mousse is simple to make and light enough to provide a textural contrast against the cake without dissipating before it marries up with the cake crumb.
