Lemon Raspberry Chocolate Cupcakes

Valentine’s cupcakes for your sweetheart, child, family, co-worker – am I missing anyone? Oh and your pets, although this Raspberry & Lemon Chocolate Cupcake won’t be appropriate for canines with the chocolate base and all, or maybe for any pet.

I just know that by way of tradition, I’m suppose to do something for the people in my life on this special day. Today and up until Valentine’s Day it will be you guys, lucky for me, because I don’t have dessert lovers in my everyday life. I know it’s something that my dessert-fixing hands can’t comprehend, especially since I love making highly stacked cupcakes like this.

Tres Leches Cake

This may look like a strawberry shortcake of sorts, but it’s not. No, it has way more depth. It’s a Tres Leche Cake which simply translates to three milk cake. To be exact, it’s a traditional Mexican dessert that starts with a white cake and is then drizzled or covered in a mixture of milk, evaporated and sweetened condensed milk.

I’ve always been a fan of this cake, no fussy frosting, not overly sweet, very rich but simple in flavor. I’ve had it without strawberries, but I really think the punch of fruit balances out the richness. In fact so much so, I took the original Better Homes and Garden recipe and flipped it from a two layer cake to seven layers. Along with that there’s just something about a highly stacked and multi-layered cake that makes it look so special.

Peanut Butter & Marshmallow Sandwich Cookies

If you are PB lover then you need to add this peanut butter cookie into your repertoire. Seriously. what’s better than a one bowl cookie? How about a four-ingredient, 20 minute peanut butter recipe, to include, making the cloud of marshmallow frosting to float at the center as well. And since it is flourless that makes this a gluten-free peanut butter cookie.

What the freak? The holiday cookie marathon just ended and here I am proposing cookies? Well, you’re talking to someone who sort of feels the same way about cookie baking right now, but trust me, grab your bake sheet. As I mentioned these are fast and easy but along with that—holy bee-jezus, these were a hit. My little guy who has no sweet tooth devoured this with his buddy.
