Fall is here and I’m pumpkin crazy. This year, I don’t know if it’s made worse by the fact that I have a blog and want to share and chronicle all my pumpkin recipes or it’s the shortage that has me rushing to make as many things as I can.

Strawberry Margarita Jell-O Shooters

Margarita Jell-O Shooters ~ A fun farewell to summer and a festive edition to your Sunday football tailgate party or gatherings. As many of you know, my Lemon Drop Jell-O Shooters are my issued dish from my girlfriend who holds the annual tailgate kickoff amongst our friends. This year with Matt being in the hospital, I sent them forward to the gathering in our absence.

Now that we can finally make the next one in two weeks, she has again requested Jell-O shooters. But who wants to repeat a dish back-to-back, that’s like wearing the same dress to two functions that have the essentially the same invitees.

That being the case, I opted to try what you see here. Somewhere there is someone screaming at my blasphemous mash-up of a cocktail with Jell-o. And my response . . . stop being so uptight. Food is fun and I love messing around with it.

Spiced Pumpkin Cheesecake with Bourbon Whip Cream~ This is the kind of pumpkin cheesecake recipe that will melt in your mouth. It’s full of fall flavors and spices like nutmeg and candied ginger, add in a chocolate pumpkin layer and you have a dessert that begs to be your pumpkin kick off recipe.

How do you decide what recipe is worthy when there’s a pumpkin shortage? Don’t start by sitting down and listing all your pumpkin recipes, unless you are prepared to be overwhelmed and frustrated by your inability to settle in on “the one”.

You go for it. Grab your bowl, measuring spoons and cups and dive right in, even if you have no ingredients for the crust. Did you notice? Yeah, I had nothing, not even graham crackers.

As it turns out, we didn’t miss having a crust at all in this pumpkin cheesecake recipe. The cheesecake is bursting with flavors, especially fall flavors.
