Can we just talk about this power veggie sandwich? It’s a sweet and savory sandwich full of so many good things like a slathering of roasted red pepper spread, butter leaf lettuce, red cabbage, grilled tempeh, radishes, strawberries, watercress and beets, all this sandwiched between eureka!® Organic Seeds the Day Bread. It’s light, it’s filing and it’s totally addicting!
Sure you could skip the grilled tempeh, but let’s go eureka!®-style and—don’t be bland and don’t be boring—rock the tempeh for a better-eating switch up. Aside from that, I’m a big fan of eureka!® bread for its rich and seed-filled flavors. Plus, all their products are USDA organic, certified vegan and contain no high fructose corn syrup, artificial flavors, colors or preservatives.
As for the rest of the filling, of course go with your preference, but can we just agree that you can’t skip the spread? The roasted red pepper gives the ensemble a rich sweetness that pulls everything together. For the veggies, use any veggies you prefer. The ones I used are what I prefer, but almost anything and any combination will work.

Ultimate Veggie Sandwich
Ingredients
- 2 tablespoons roasted red pepper spread
- 2 slices eureka!® Seeds the Day bread
- butterleaf lettuce
- red cabbage
- grilled tempeh
- radishes
- strawberries
- watercress
- avocado
Instructions
Spread red pepper spread on both slices of bread. Layer one slice of bread with remaining ingredients.Place second slice of bread on top.
