Triple Citrus Bars

Triple Citrus Bars ~ Lime, lemon and orange all your favorite citrus baked into one blissful bite.

 

I love a good tart and tangy lemon bar, but I have a few friends who don’t like them because of their extreme nature in tartness. Well Folks, you’ll be happy to know this is a bar for everyone. It’s a great compromise for those who are less inclined toward the tart and still a delightful treat for those that fall on my side of loving anything lemon from mild to extreme tart.

You can find the recipe for these Triple Citrus Bars at CooksIllustrated.com (only for a limited time though-see notes). A bit of a pain to make but wonderfully delicious, and a pain only, only because I don’t have a good juicer so it’s always a lot of work for me to juice anything, but the rest of the recipe is a breeze.

A few notes:
1. I used graham crackers instead of animal crackers, as I did not have any animal ones on hand. If you are wondering, yes, I still added the brown sugar and did not find it too sweet.
2. I used the zest of real lemons, but the juice of Meyer lemons. I think the real lemons zest has a better bite, while the juice of the Meyer lemon has a better fruitiness than regular lemons.
3. I couldn’t fine Key or Persian limes so I just used regular ones.

5. As an aside:  CooksIllustrated.com requires you to have a membership to view most of their recipes. However, featured recipes like this one are free, when they are are no longer featured they cease to be free. You really should consider getting a membership. They do a lot of recipe and product testing that will save you time and money.

    These bars look fantastic!! I love being able to see the zest in the bars. I think I’ll have to get a membership and find this recipe. I would love to hear about your tangy citrus bars!

    I love anything citrus and this sounds right up my alley!

    Also, I really should get that membership to Cook’s Illustrative. I love their cookbooks and website but don’t fancy their magazines for how wordy it is and the lack of pictures- I always feel like I should be at a library when I read it 😀

    I love Cook’s Illustrated, too. I don’t watch much TV but I Tevo their shows and own several of their books. This citrus bar looks wonderful–I’m always on the lookout for the next best lemon bar (and yes, I like mine on the tart side also).

    On a side note, I tried to subscribe to your posts but I don’t know if I was successful. Following you on Twitter, too. Your blog content is great; your pictures put mine to shame and I’ll be learning a lot from here.

    There are lots of varieties of range of credit rating. Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
