Strawberry Tiramisu

Happy Monday, everyone! I know it’s a holiday and I probably should share this recipe tomorrow, but I’m super pumped about this Strawberry Tiramisu recipe (and pssst . . . . there is even a KitchenAid stand mixer give-away, so keep reading!). Think of this strawberry riff on the classic tiramisu as the summer version that’s lighter, fresher, but every bit as good.

For this recipe I made everything from scratch, including the ladyfingers—trust me when I say it’s way easier to make than you think. The custard portion of this tiramisu is one that can stand up to slicing rather than being one that you scoop. The finishing top takes a little more effort, it’s well worth it for its show-stopping appeal.

    But, yours is GORGEOUS! I can’t get over how much time it must have spent to slice those strawberries. I want 3 slices of this! Pinned!

    just like .. a “reuben sandwich” is a SPECIFIC RECIPE.. if you put anything on it besides corned beef, kraut, swiss cheese and thousand island dressing on rye bread… ITS NOT A RUBEN…its a corned beef sandwich…with stuff. there is no such thing as a “turkey ruben” i dont care how many people call it that… its not a reuben..its a turkey sandwich on rye with kraut and dressing…

    this is not tiramisu. im sure its wonderful.. but… tiramisu?? no…

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
