Strawberry S’mores Bites

Strawberry season is in full swing and I plan on keeping my refrigerator fully stocked until the end of it. Yep, I’m setting you up for a slew of strawberry recipes, like this one and few more.

For today, I’m keeping it simple with these Strawberry S’mores Bites. If you need any more convincing, these are great for entertaining—easy to make and always impressive. But it’s hard to go wrong with toasted marshmallow frosting and dipped chocolate.

And because they are so easy to make, I pumped out quite a few batches of these as thank you’s to all those that helped Matt and me when the baby came. Strawberry S'mores

Yield: 14-16 Strawberry Bites

Ingredients:

  • 14-16 medium strawberries, hulled
  • 4 oz. chocolate (I used 65% cacao)
  • 1 1/2 teaspoon shortening
  • 4 tablespoon graham cracker crumbs

Marshmallow Frosting

  • 2 egg whites
  • 1/2 cup sugar

Directions:

Preparation: Line a baking sheet with parchment paper.

  1. Place chocolate and shortening in a microwave safe bowl and heat in 15 second bursts stirring in between until chocolate is fully melted.
  2. Dip strawberries in chocolate, then graham cracker crumbs. Place dipped strawberries on on parchment lined baking sheet to dry.
  3. To make marshmallow frosting: Combine egg whites and sugar in a stand mixer bowl and place it over—not on, simmering water. Heat mixture to 160 degrees F while whisking constantly. Transfer to a stand mixer fitted with a whisk attachment and beat on medium high speed until mixture cools, doubles in volume and forms stiff peaks; about 10-12 minutes. Transfer marshmallow frosting to a pastry bag fitted with a close start tip and pipe into hulled strawberries. Use a kitchen torch to toast.

NOTES:

  1. To hull the strawberries, I used the Chef'n Strawberry Huller.  It can be found on Amazon or at William Sonoma.
  2. You may have more marshmallow creme than you need.
  3. Save yourself some money and just buy a Bernzomatic propane torch instead  of one of these kitchen torches you usually see in William Sonoma and Sur la Table. They can be twice the price and aren't nearly as strong.
