Well since today is St. Patrick’s Day, I thought we might as well fast forward to Easter because that’s how it goes with blogging–it’s like retail. We bloggers are always ahead, so you can plan ahead.. With that, here’s an easy no-bake Strawberry Cheesecake Tartlet–and it comes together in just 20 minutes. How do you like that?
Easter is a big deal in our family, and there are alot of things going on that day besides just the food–things like Easter egg hunts. If you were here last year, then you’ll remember me mentioning my son was not amused with my joke Easter eggs that were filled with silly stuff like lint, candy wrappers and such. I was actually surprised by that, considering his usual good sense of humor. Apparently egg hunting is serious business, especially when they are filled with money and lottery tickets.
Sure there are some candy filled ones, but as I’ve mentioned a 110 times before, he’s not really into sweets – so money and lottery tickets it is for the bulk of them. I’m sure I can’t be the only one who does this. In fact if you know of any creative egg-filling ideas, please share them in the comment section.

Strawberry Cheesecake Tartlets
Ingredients
1 cup all-purpose flour 1/4 cup sugar 1/4 cup ground toasted almonds 1/4 cup butter 1 egg yolk, lightly beaten 2 tablespoons water 1 4-serving-size package cheesecake instant pudding and pie filling mix 1 cup evaporated milk 2 teaspoons vanilla 1/2 teaspoon almond extract 1/3 cup strawberry preserves Sliced strawberries and/or toasted sliced almonds

Ha ha… blogging is like retail- so true!! These mini tartlets are SO adorable. I’m picturing a bunch of little kids running around with them in one hand, and a basket of colored Easter eggs in another. They’re perfect for a party! Great shots of the strawberries too 🙂

My grandparents would fill our eggs with dollar bills and loose change. It was the best Easter egg hunt ever. Makes me wish I were a kid again. These cute little tartlets are stunning.

Like these. Sounds so simple. However, the BH&G recioe just presses the tart mixture into muffin cups. Did you use tartlet molds? And did you press another mold on top of it to get the ridges INSIDE the cup? Or are these store-bought? I know, that’s either sacriledge or I’m calling you out, but I just love the shape of yours better. And did you add cocoa to the mixture for the dark ones?

Hi Brian– Not sacrilege at alll.The BHG recipe uses homemade tarts, but in my post over on their blog Delish Dish, I mention short cutting the recipe by using ready-made shells purchased from Amazon.
