Spinach and Artichoke Pizza

Well this one is for those of you who are still suffering from a holiday hangover. You know the feeling, sluggy from the excess of calories, along with everything being a bit more snug than you’re comfortable with. Well, it happens to the best of us.

And when it does, a little a balance goes a long way towards getting back to being centered. 

For me, I naturally have way too much sugar – actually, this is a regular occurrence. I will have cake for breakfast and then a donut at 10am, but lunch and dinner is usually a power salad with arugula, berries, brown rice, quinoa, with a protein or a green pizza like this.

It’s easy to make, filling, and taste great. In fact you would never know there’s an effort to be healthy with the thin wheat crust, the swap out from a higher fat cheese to Feta and the greens of course are lightly sauteed to a tenderness and flavored with a heavy leek sweating.     I’m still feeling the hangover big time. I’m visiting home for another 5 days, and I just can’t bring myself to go all diet yet. That being said, as soon as I do, this pizza will be on my list 🙂

    Yup – the holiday hangover is still in the air and still in my jeans… ugh. This is the worst time for me to be taking a beach vacation… But I can still get behind this bpizza – thank goodness for all the vegg!

    Artichokes are most definitely a competitor for favorite vegetable ever. I could eat them for every meal if they weren’t so darned expensive! This is a beautiful dish – I can’t wait to try it out!

    I’m a recent new fan of artichokes! This pizza isn’t loaded with cheese, so it’s nice that the artichokes and spinach are the main flavors. I don’t make homemade pizza ever, so adding this to my list Naomi 😉

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
