Snickers Ice Cream Cake

Let’s skip the guilt bartering of one slice of this cake today for three servings of salad tomorrow. Grab your stretch pants – it’s a Snickers ice cream cake, with a layer of chocolate ice cream laced with brownies and vanilla ice cream cake with more of the same—the line of filling between the two: chopped Snickers.

Really, if you are anything like me, you have these “guilt swap” thoughts. But they are just that—thoughts. A momentary buffer that disappears at first bite. I know—I should change this about me—but later, for now I’m too busy for mental flossing.

Or make this for others and you won’t find yourself in the guilt-swap position. Trust me, it’s easy enough to make. As with most ice cream cakes this comes together easily and quickly.     Finally some has push aside the guilt factor with cake! I hate when people tell me to feel guilty about sweets. I am complete ice cream addict and this version is a keeper. SO many possibilities with this recipe too! Maybe a crunchie/honey comb ice cream cake next?

    It’s beautiful and I’m a huge Snickers fan! I’ve baked them into cookies and bars but never ice cream. Great thinking. I love the photos so much, too!

    Ok so I have to tell you, your version is 100 times BETTER looking than the one at BHG – I had to click on the link 3 times before I realized it was the same cake. BHG cake looks blah compared to yours.

    Next week, you can get free pancakes served to you on National Pancake
    Day at IHOP. I don’t know about you, but I would much rather spend that money on an attraction or nice dinner somewhere. On February 24th, IHOP will give away a free pancake breakfast to anyone that comes through the doors.

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
