I’m taking the the classic rice krispie treat and scaling it up for a Reese’s rice krispie recipe with a little help from Matt. Think rice krispie cereal mixed with Peanut Butter Captain Crunch and tossed with miniature Reese’s peanut butter cup. To bind it all together is the required marshmallow with a mix of dark chocolate to temper the sweetness. Of course I insisted we finish it with a thin layer chocolate and a drizzling of melted peanut butter chips because without it, the bars seemed naked. What resulted is a peanut butter rice krispie treat that is balanced between chocolate and peanut butter with an extra layer of texture from the Peanut Butter Captain Crunch.
Here’s the thing, Matt has never had an interest in cooking, and baking – forget it. The only cooking I have ever watched him do is scrambled eggs for our little guy. So you can imagine how I nearly aged 10 years from shock when he mentioned that he wanted to learn to cook more.
Whaaat the hell? It was like someone short circuited my brain. A thousand incomplete thoughts of where to start raced through me. Then the one silenced thought that came pouncing forward was what the hell happen to the man I married. The man who would rather eat out than eat at home. But I smiled and hugged him hard. This was a concession to my passion for food.

I rarely do this, since this is mainly a baking blog with a sprinkling of bits and pieces of me stumbling through life, but this is life so I’m chronicling it to remember its raw form. Skip to the recipe to avoid further stomach turning.
Matt and I haven’t always been where we are now. Nope. The hard truth is, in the course of five years we lost our way. We were ready to call it quits to keep what humanity we had left for each other and for ourselves.
But then something turned around, it was like we hit rock bottom in a relationship sort of way. While we were there, sorting and sifting our way through, we found something buried under all the heaviness: love.
I’m thankful for my husband and proud of the man I married and the father of my child. And I am forever touched that in one sentence, an unexpected email from him read, “This is my new song to you, Overwhelmed by Tim McMorris.”. From there we have been quietly peeling away the wrinkled layers of life.
I have no idea if he will read this since he doesn’t always read my postings, but if he does he may be upset that I shared so much.

Reese's Rice Krispie Treat
Ingredients
- 2 tablespoon butter
- 1/3 cup chocolate chips
- 1 bag (10 1/2 oz mini marshmallow)
- 6 cups Rice Krispie cereal
- 2 cups Peanut Butter Captain Crunch cereal
- 8 oz. miniature Reeses Peanut Butter Cup
Topping
- 10 oz bag Ghirardelli 60% bittersweet chocolate
- 2 1/4 teaspoon corn syrup, divided use
- 8 tablespoons butter
- 4 oz. Reese's peanut butter chips

Preparation
Cover 9 x 13 in. pan with bake spray
To make Reese's Rice Krispie Treat
- Place butter, chocolate and marshmallows in a pan over low heat to melt. Stir melted ingredients until combined.
- Add in Rice Krsipie, Peanut Butter Captain Crunch and miniature Reese's Peanut Butter Cups, stir to combine. Quickly press finished mixture into pan, Set pan aside for 30-40 minutes to cool and set.
To make topping and assemble bars:
- Place chocolate, 2 teaspoon corn syrup and butter in a pan over low heat to melt. Gently stir melted ingredients until combined. Pour chocolate mixture on top of cooled Reeses Rice Krispie layer, using an offset spatula evenly spread chocolate layer.
- Place Reeses peanut butter chips and remaining 1/4 teaspoon corn syrup in a small pan over low heat to melt. Gently stir melted ingredients until combined. Transfer mixture to a pastry bag and drizzle on top of cooled chocolate layer.
Notes
A few notes:
- It's not necessary to use the Peanut Butter Captain Crunch, but we added it for an extra layer of peanut butter flavoring.
- For a stronger peanut butter flavoring, swap out the chocolate chips for peanut butter.
- Of course feel free to skip the topping, but it definitely balances the flavor by keeping the Reese's rice krispie treats from being to peanut butter rich.
