Today’s fun Poke appetizer for New Year’s Eve appetizer is brought to you in partnership with KitchenAid®. They take no time to make it all, especially if you have the Food Processor attachment that can slice cucumbers like a boss with just the slightest turn of a wrist.
I’m assuming a good many of you, either has or already have a KitchenAid® Artisan® Stand Mixer, or received one for holidays or you are planning to purchase one. Well, when you do, or if have one, go grab the Food Processor attachment . Next to my mixer, a food processor is my next most important countertop appliance. I use it almost daily.
It makes kitchen life easier and when I don’t want to spend the time to muscle through slicing anything, I just pop on the attachment and BOOM—done in seconds. A good thing if you are making this, because if you are like me, after an avalanche of holiday cookie baking and holiday cooking I’m ready for low-prep, easy-to-make food.
A few tips when it comes to using the Food Processor attachment for this recipe: (1) make sure the cucumber you buy isn’t too large in circumference (2) pick cucumbers that are sturdy and not mushy. That’s it, now you are ready. Have it and Happy New Year, everyone!
Poke Appetizer Bites
Ingredients
- 1 -2 large cucumbers, sliced
- 14 oz. poke
- 2 oz. seaweed salad
- 1 tablespoon furikake
- 1 tablespoon chives
Instructions
Placed sliced cucumbers on a tray and top with poke and seaweed salad. Sprinkle with furikake and chives. Serve immediately.
