One Skillet Creamy Chicken Dinner [VIDEO]

This week has been hella-crazy as I’m gearing up for the book shoot. Yay—so close to finishing. I want to scream with excitement and relief, but instead I made this one skillet creamy chicken because I had hungry kids looking at me with pleading eyes. Okay, maybe not that dramatic. But it’s what a guilty mom feels like.

Lucky for me this dish delivered big time and all was good in my home again . . . phew!! Naturally because of that this will be on repeat for the next two nights (and I have a flat of chicken from Costco to work through).

Because it’s crazy easy, so you’ll have to watch the video to see just how easy. And because it’s crazy good, so, you’ll just have to make it.

Side note: It’s a one skillet recipe minus the mash potatoes. A very clear headed viewer pointed that out.  I totally brain faded! The photo is somewhat misleading since the potatoes are featured with it. But in my defense, I overlooked that thinking you could serve this with anything like: cauliflower rice, cannellini beans, simple rice or  just about anything or nothing.

    Can I just say what a relief to find someone who actually knows what theyre talking about on the internet. You definitely know how to bring an issue to light and make it important. More people need to read this and understand this side of the story. I cant believe youre not more popular because you definitely have the gift.

    Made this for dinner tonight and it was delicious! I don’t love tarragon, but wanted to make the recipe as is for the first time. Next time I will swap it out for something different…thyme perhaps?

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
