March Madness Dessert:Salted Caramel & Chocolate Stout Whoopie Pie

Salted Caramel and Chocolate Stout Whoopie Pie ~ Your March Madness power dessert! Huh? Yeah, that’s right. Chocolate beer batter cakes and salted caramel buttercream filling meet up for  a 3-in-1 flavoring  in  a whoopie pie that’s a little bit sweet, a little bit salty and a whole lotta beer  for March Madness gluttony.

Now you’re probably wondering what is someone like me is doing writing about March Madness. Let me say, here’s something that if you don’t know me might surprise you-I’m a sports fan.

I grew up playing competitive sports, and before that, I was a tomboy for most of my younger years. That’s what happens when you have an older brother you idolize—I learned how to be one of the boys to play with the boys.

That included playing and watching basketball. Of all the sports, basketball was a favorite in our house. Which I have to say to this day works out nicely since Matt is a huge basketball fan as well.

We both grew up watching the Lakers and today we continue that tradition with our boys. Although the biggest bummer now is I can’t keep my own with any males and when I play a game of  H.O.R.S.E with Matt we end up playing “Horses are big beautiful animals” just so I don’t get demolished in under 10 seconds. But for the sake of my ego, I should preface—he is way better than the average recreational player.

    I’m always looking for fun flavor combos. Those whoopie pies sound great. They are so cute, too, especially with that little bottle of milk.

    I’m a sports girl at heart too. Definitely can’t keep up with the boys anymore but it’s still fun to try. These sound delish!!

    With Arizona’s victory over Duke, I am currently in FIRST PLACE in my office pool. Woo!

    And… salted caramel is my all-time favorite. So put them in a whoopie pie, even better!

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
