I’m always in search of good snacks that taste good and is good for my boys. I love it when those two things come together in a fast and easy recipe like this homemade granola bar. This is definitely one you want to bookmark.
It’s fruity, with just the right balance of sweet and salty, most of all it’s chewy–just the way I like my granola bars. Of course that might be because a while back (seven years ago!) I chipped a tooth on a too-crisp granolabar—that admittedly, I made. Every since then, I have been going for chewy and holding grudges against all crisp granola bars.

Mango Coconut Granola Bars
Ingredients
- 2 1/4 cups old fashioned rolled oats
- 1 cup sliced almonds
- 3/4 cup pistachios
- 1/2 cup raw sunflower seeds
- 1/4 tsp cinnamon
- 1/8 tsp nutmeg
- 1/2 cup brown rice syrup
- 1/3 apricot jam
- 1/4 dark brown sugar
- 2 tbsp unsalted butter
- 1 tbsp vanilla bean paste
- 1 tsp kosher salt
- 1/2 cup dried mango, diced
- 1/3 cup sweetened coconut shreds
- Pinch cayenne
