Pineapple sweetness punched up with a bit of spice rum for a cooling cocktail with a kick.
This week’s summer cocktail is a bit of a departure from the others. The strengh of the drink quietly reveeals itself outside of its fruity flavor in just a few sips.
You may have noticed that this last week was a bit slow on the posting, I even missed my weekly cocktail popsicle. But while it was slow here, work was an exercise in insanity. Between the usual 8-hour-plus days, I managed to cram in working 30 hours over a 48 hour period.
That meant being up by 3:15 and at work by 4AM. It was during in those early mornings, while starring at font size six, page 4 of a150 page document that I started to reflect about the roads not taken.
And then I realize . . .
Crap, I smell puke; throw-up something left over somewhere on me from my son’s bout of projectile vomit from the previous evening.
Yep, after two 15 hour days, projectile vomit nearly brought me to a paralyzing state of frustration, but then the smelly chunks of half digested spinach and chicken reminded me that feeling sorry for oneself is a complete waste of time. I had a child to bathe, a bed to clean and baking soda paste to lay.
By Friday, I was ready to be recalibrated with what you see here.
Key Largo Chill
Makes 1 serving
Ingredients:
- 2 oz. pineapple juice
- 2 oz. coconut water
- 1 oz white rum
- 2 oz spiced rum
Instructions:
Place coconut water, pineapple juice, spiced rum, rum and lime juice in a cocktail shaker and shake well. Pour into chilled glasses.
I could use this kinds kick for my weekend, so refreshing looking 🙂

Your directions say to mix in lime juice, but I don’t see it listed in the ingredients. How much do you add?
