Holiday Cookie Round-up

Alright holiday lovers and fall time nesters, since high baking season is in full swing I thought I would take the time before we launch into 2012 holiday cookies to do a round up of some of my favorite cookies from last year.

I know many of you were not here last year, so I’m sharing what you missed and hopefully a few of these will make it into your holiday cookie rotation.

Along with sharing cookies, we need to address something here. Something I’ve addressed before but as of lately its gone from bad to worse: my writing.

Some of you know what I’m talking about, for those that don’t let me quickly synopsize it by sharing what someone asked me other day, “Are you texting with your toes?” Ouch.

While a portion of it is my sucky iPhone keyboarding skills (described by someone as monkey pawing), I want to say in my defense, I’m certain the other portion is my jerk-off phone as evident by the fact it still can’t seem to spell my son’s name right. It’s Cole not Come–see my point, it has a completely defective auto correct.

Luckily many of you are spared from the mind bending translation excerise of being on the other end of texting and Twitter DM’ing with me. However, if you are here then you’ve seen some crazy sentences with shifting thoughts midsentence with no regard to what came before or after, missing words and just plain crazy stuff like this from a previous post:

“Remove from human and dust with powder sugar.”

What the, WHAT, is right. I have no idea how I tapped that one out, but I do know writing a post at 2am is not a good idea.

My point is if you see something missing in a recipe or if you are blinking in disbelief at something like “Remove baby from the microwave”, please–please leave me a comment.

Now with that out of the way, I hope you enjoy last year’s cookies and find something to add into your rotation for this year. If not, stay tuned because a whole new set of holiday cookies are coming up in the next few weeks.

    I really want to have a cookie table at my holiday party this year and I am trying to figure out how I can make some of these cookies or dough ahead of time and keep them fresh. Any ideas?

    Wow, what a roundup! All in one place and love it!

    Now the question is, what is your fave cookie or couple of faves and why? My fave cookies are chewy and rich, not cakey and not crispy. I love soft ‘n chewy. What would you recommend first?

    Hi Naomi,

    Some of these cookies look fabulous, but how do I get the actual recipes? When I click on the name of each cookie, it just brings up the picture. I tried typing the names of the cookies into the search box but I still don’t get to the actual recipes.

    I have the same problem as Rosanne. There is no link from photos to recipes. I even input ‘Pecan Sandies’ in thesearch field and got an error. This post is just a tease without being able to ACTUALLY enjoy last year’s recipes. = )

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
