It’s cookie season, and if you have been following the Holiday Cookie Series this year, you know I started back in October. Well, today, I have not one, but nine cookies to share.Yep, see all that goodness below? It’s a virtual cookie exchange headed up by Honestly Yum with some of my favorite bloggers.

Now, if you are regular reader, then you know every year I go crazy with peppermint, so don’t be surprised if you see a few more very soon.
For now, let’s cover the cookie you see here. It’s start’s with the an ultimate rich chocolate chewy base from here. From there I took it and gave it a few tweaks, like topping it with some marshmallow fluff and then finishing it with a glaze and some crushed peppermint candy. It’s rich, so you probably should have a glass of milk within arms reach or maybe you are a dunker, in which case—go for it. I’m dunker, but I like mine with coffee not milk.
Want to really double down? Yes? Then you should have these Peppermint Hot Chocolate Cookies with some homemade peppermint hot chocolate.

Peppermint Hot Chocolate Cookies
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 12 ounce package (2 cups) semisweet or bittersweet chocolate pieces
- 3/4 cup butter, softened
- 1 1/2 cups packed brown sugar
- 3 eggs
- 1 teaspoon vanilla
- 1 cup semisweet chocolate pieces or white baking pieces

To finish the cookies as you see in the picture you'll need:
- 1 cup chocolate, melted and warm NOT hot
- 3/4-1 cup of marshmallow fluff
- 1/2 cup of crushed peppermint candy or candy canes
Layer cookie with marshmallow fluff pour chocolate on top and spread it around to cover the fluff. Sprinkle crushed peppermint candy on top.

Those sound amazing! I, personally, do not mind a bit of peppermint overloading–it is an awesome flavor, after all, especially with CHOCOLATE. Would totally try this cookies, maybe with a glass of that peppermint hot chocolate too? 😀

I wish chocolate peppermint season was year round! It’s much to short, crammed in between Thanksgiving and Christmas. I’d love to drink peppermint hot chocolate year round (and I usually do, as long as the mornings are cold enough!), especially if I could pair it with these cookies. Marshmallow filling??
