Holiday Cookie #7: Peppermint Hot Chocolate Cookies

December 11, 2014 By Naomi Robinson | Bakers Royale 17 Comments

It’s cookie season, and if you have been following the Holiday Cookie Series this year, you know I started back in October. Well, today, I have not one, but nine cookies to share.Yep, see all that goodness below? It’s a virtual cookie exchange headed up by Honestly Yum with some of my favorite bloggers.

To find out what each one is and to grab the recipe, just hover and click on the cookie. It will take you to the recipe.

Now, if you are regular reader, then you know every year I go crazy with peppermint, so don’t be surprised if you see a few more very soon.

Peppermint Hot Chocolate Cookies with Bakers Royale

For now, let’s cover the cookie you see here. It’s start’s with the an ultimate rich chocolate chewy base from here. From there I took it and gave it a few tweaks, like topping it with some marshmallow fluff and then finishing it with a glaze and some crushed peppermint candy. It’s rich, so you probably should have a glass of milk within arms reach or maybe you are a dunker, in which case—go for it. I’m dunker, but I like mine with coffee not milk.

Want to really double down? Yes? Then you should have these Peppermint Hot Chocolate Cookies with some homemade peppermint hot chocolate.

Those sound amazing! I, personally, do not mind a bit of peppermint overloading–it is an awesome flavor, after all, especially with CHOCOLATE. Would totally try this cookies, maybe with a glass of that peppermint hot chocolate too? 😀

I wish chocolate peppermint season was year round! It’s much to short, crammed in between Thanksgiving and Christmas. I’d love to drink peppermint hot chocolate year round (and I usually do, as long as the mornings are cold enough!), especially if I could pair it with these cookies. Marshmallow filling?? I’d hoard every single one. 🙂 Pinned!

This Kale and Sausage Strata is the kind of dish that uses up all those bits and pieces in the refrigerator. This means dig through the crispier and let’s make the most of what’s in there. For what you see here, I threw in two handfuls of kale, 2 cups sausage, some mushrooms and cheese. All things that came together for one cohesive dish. To boost the flavor, I used Morton® Coarse Kosher Salt because its coarse flakes makes it easy to pinch and allows me full control when seasoning a dish.
