Good Things: Story Book Project with The Kids

Summer is grinding on despite my kid’s wishes and protests for it stop. We are about 2 weeks away from the start of school, so naturally we are in go-mode to cross off as many things on our summer bucket list as possible. The boys are certain we need a miracle or a prayer to get through it.

I’m of the mindset you win some, you lose some. What matters more is how we get there. With that, we all agreed to tackle the biggest one on the list: the story book. Something we started, and let languish midsummer because the heat made us all limb heavy and lazy.

But today we are celebrating. Matt and I took the kids to the park. We threw down a blanket with crayons, markers, color pencils and some snacks. Snacks like Horizon Milk and Cheese Sticks. They are easy on-the-go organic food that are great for school or anytime. With 8 grams of protein in the milk boxes and 7 grams of protein per mozzarella string cheese stick, it’s our snack of choice. We love the nutrient richness of it, along with knowing it’s USDA certified organic and that means no added hormones, no antibiotics, non-GMO and the boys love the taste.

We ate, we drew—annnnd—finished the story book!

I’m so proud of them. It’s beautiful in all the expected disjointed way when four people are involved with varying levels and love for story telling. There are monsters, aliens, bad guys and good guys, butt-kicking female heroes and more. It’s a little sci-fi, a little fantasy with shifting time tables and worm holes. It’s nothing like anything, but better than everything because we did it together and we finished.

And that is why we are celebrating and doing this confi-DANCE to spread the word about Horizon Organic’s back to school campaign, benefitting Big Brothers Big Sisters of America. BBBS provides one-on-one mentoring to unlock potential and create confidence for children facing adversity. The #HorizonConfiDANCE campaign will help BBBS recruit, train and support new recruits to new matches. This started in 1904 and has been going strong ever since, with over 2 million youths served in the last decade.

Now if nothing else, that should give you enough reason to get up and do a confi-DANCE of your own. For every dance shared on Instagram or Facebook by September 30th, Horizon Organic will give $5 to Big Brothers Big Sisters of America, up to $200k. Just use #HorizonConfiDANCE.

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
