Cocktail Popsicles: Sex on the Beach Popiscles

Nevermind the name of this cocktail turned popsicle. Gimmicky-I know, but that’s what its called and its really good. It’s traditionally made with orange and cranberry juice, vodka, and peach schnapps, but I went for the less mainstream version.

Sex on the Beach

The other version of this drink uses pineapple and Chambord instead of orange juice and peach schnapps. For these Sex on the Beach popsicles I kept the pineapple body and skipped the cranberry juice for crushed raspberries and changed out the Chambord for my new obsession Pama, a pomegrante liqueur.     I had a recipe for the drink of the same name on my blog today (linked to an old post) then took it off because I was like, well, maybe I shouldn’t. But now, I should have!

    These are so beautiful, I can even imagine how good they taste having all the ingredients that I love, your popsicales rock!!! they are so much better than having just the regular cocktail!!

    LOL! I love this! Note that I used a pronoun, I don’t think using the title/name of the treat wise to follow the phrase I love…LOL! Love the refreshing goodness. Happy Summer!

    After changing the recipe so much you really can’t call it a sex on the beach. Maybe you should give it a name of your choosing

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
