Cocktail Popsicle: Honeydew Cucumber Margarita Popsicles

Honeydew Cucumber Margarita Popsicle ~ Get  your tequila with no drunk-dial regrets in this week’s cocktail popsicle featuring a honeydew margarita with cucumber. This may be my favorite cocktail pop yet! I love how the cucumber lends a crisp refreshing edge to sweetness of the honeydew and the tequila bite.

Let me say, I totally took one for the team this week! It’s not often (okay, never) that I find myself sloshed on a Monday night.

 

And for today’s random bit . .  . have you seen this tequila skit with Pee Wee Herman, Adam Sandberg and Anderson Cooper’s. I’m sure many of you have seen it, but for those of you haven’t . . . its H-I-L-A-R-I-O-U-S! I’ve seen it so many times that whenever I hear the word tequila it filters through with their voices screaming, “Tequila!”.

Anyhow,  if you can’t have these right away to push you over the hump, the video will certainly entertain you and break up your day.

    Hi Liz-I got the form from Amazon: http://su.pr/2aTMPs If you get it, don’t use the metal top. It’s extremely hard to remove once everything freezes.

    I have that same mold and hate it. The lid doesn’t work, the sticks get caught and half of them end up broken. Did you experience that?

    Charlene- I skipped using the lid and I did end up with two broken ones, but that had more to do with my impatience of not waiting a few seconds after running hot water on the outside of the mold. I actually like the mold quiet a bit.

    Try it without the like or soak the sticks in water first so the expand before you put them in rather than expanding while freezing, which can make the sticks hard to remove from the lid

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
