This year, with my little guy being older, I’ve roped him into more the holiday baking. To keep him in interested, we taken on a few more crafty cookies, but I’ve kept the decorating – easy, fun and doable – like this stacked Christmas trees.
It’s simple to assemble and provides so much fun for kids. It’s a cinch to make, and looks great. But I think Cole’s favorite part of it he can pick off the cookies one-by-one and eat them.
The fact that it’s edible is the biggest selling point to kids. In the past we’ve made gingerbread houses, and although you could technically eat it, we never did.
But with these cookies, they stay soft and chewy and the glaze on it is a simple poured buttercream. Something I prefer working with it as it as a richer taste than royal icing. Granted its more limiting, but then again, I don’t do elaborate cookies, so it works great for me.
And yes, once it dries, as you can see it stacks one on top of another just fine. To get started click you will need one bag of Betty Crocker’s Gingerbread cookie mix (or you can use the sugar cookies flavor as the original recipe does) and one can of Betty Crocker’s Rich and Creamy Vanilla Frosting melted to the consistency of chocolate.
