Chocolate Chip Nutella Cheesecake Bar

Ever have those days when you are craving something sweet but you don’t want to put out the time and too much effort? Well, here you go a chocolate chip cookie bar with Nutella. Let me help you with this one – think chocolate chip cookie crust then a layer of Nutella cheesecake and finished with a rich chocolate layer on top. Heaven.

To speed things up, I used PAM®’s new spray. I’m not much for buttering and then brushing or wiping the excess off sort of greasing. Well the new PAM® has promised it’s 70% better, so I wanted to take the challenge and see if that was really the case.
The best way to test it was to use something that had a lot of grooves on it and involved chocolate, but not just regular chocolate that shrinks when it chills. I used a recipe that involves a soft chocolate layer that would not pull away from the sides – something that would require careful removal to keep the ruffled edge.
Guess what?
I will not be getting a full refund on my can of PAM. It worked beautifully.  My fandom for PAM continues.  It helps to cut down on my prep time and I never have to worry that after putting in 1-2 hours of work that when the time comes to unmold or remove my baked goods it will all fall apart because something stuck to the pan.
So along with my mixing bowls, measuring utensils and mixer, PAM is right there in my kitchen essential line-up.
A few notes:
  •    I used a 14×4 tart pan, but an 8×8 pan will work just as well.
  •    If Nutella is not your thing, swap out that portion for peanut butter.
  •    Bars are best eaten the same day.

Chocolate Chip Nutella Cheesecake Bar

Makes one 8×8 pan | Preparation:  Cover pan with PAM bake spray
Ingredients:
Chocolate Chip Cookie Layer
·         ½ cup butter, melted
·         ½ cup brown sugar
·         1 egg
·         ½ teaspoon vanilla
·         ¾ cup flour plus 2 tablespoons
Nutella Cheesecake Layer
·         8 oz cream cheese, softened
·         1/3 cup Nutella
·         1 egg
·         ½ cup sugar
·         1 teaspoon vanilla
Chocolate Layer
·         6oz chocolate
·         1 teaspoon corn syrup
·         5 tablespoon butter
·          
Instructions:
To make chocolate chip cookie layer
1.       Melt butter and let cool to warm. Add in brown sugar and mix to combine. Add in egg and vanilla extract and mix to combine.  Add in flour and fold to combine. Fold in mini chocolate chip and fold to combine. Pour mixture into pan; set aside.
To make Nutella cheesecake layer
2.       Place cream cheese and Nutella in a bowl and mix to combine. Add in egg, sugar and vanilla and mix to combine. Pour mixture on top of cookie crust layer.
3.       Bake assembled pan at 350 degrees F for about 15-20 minutes or until toothpick is clean when inserted and removed from center of bar. Remove from oven and cool on a wire rack
To make chocolate layer
4.        Place all ingredients in a heat proof bowl set over simmering water. Stir until melted. Pour mixture on top of cooled bar, using an offset spatula evenly spread chocolate layer.

    I use mine to easily take out honey or corn syrup from a measuring cup. Spray the measuring cup with Pam before pouring in the honey, the honey will slide right out.

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
