Chocolate Cannoli

Since there is a lot to talk about today, let’s start with the food. I’ll be brief: make this. Yes, you have to fry it, but it’s not that bad. Seriously, I’m a deep-frying hater and would make this again–hot oil splatter burns and all (btw-the burns only happen if you suck at deep frying like I do). As for the taste, it’s spot on. The chocolate cannoli shell is soft and lightly flavored, a perfect setting for the chocolate ricotta filling that’s good enough to eat alone–go ahead and pipe some into your mouth between shells.

Like I said we have a lot to talk about today, so next on the agenda: check out the new design! Yay, to Lindsay of Purr Design for her awesome work, and more importantly, her patience for taking the time to find out what I really wanted rather than pushing her design aesthetics. I finally feel like I caught up with the rest of the blog world. Look, there’s an RSS feed, an email subscription and coming soon is a recipe index.

And lastly, don’t forget the giveaway for the KitchenAid® ProLine® 7-Quart Stand Mixer and KitchenAid® Pasta Attachment is still going on. See those cannoli shells, I bypassed manually rolling out the dough and instead used the pasta attachment. It’s pretty fantastic-everything comes out perfectly uniform, and saves me a lot of elbow grease and from over working the dough.

I know it’s been a hodgepodge of a post today. Tomorrow I’ll back to our regularly scheduled program.

    I’m heading over to check out the recipe right now… because damn! I want to lick that cannoli inside and out. Yeah, I went there. Ok, so another thing… I highly recommend purchasing a deep fryer. Because it is just magical for recipes like these.

    Hi Naomi! CONGRATS on the beautiful new design. Lindsay is so talented and has designed all of my favorite blogs including yours. I am on her waiting list for this year and I feel so special! I can’t wait. And these chocolate cannolis are gorgeous, as per the usual. I love cannolis so much but have never seen a chocolate version. These blow me away! I wish I could have a few of them laying around the office right now. I’m still hungry after my lunch break 🙂

    The new site looks amazing! And the cannolis! I want one now. I too ahve a really hard time frying anything. The mess makes me crazy. The smell in the house is worse and what on Earth to do with the left over grease! Ugh. I might have to break down and do it though. I reserve frying for only specials foods that absolutely require it but that I can’t live without and this might be in that category.

    I honestly had never thought about a chocolate cannoli shell!! These look amazing. I’m not a big frying fan either, but might have to make an exception for these!! Lovely pictures!

Truvia Sweet Complete Sweeteners are zero-calorie and made with plant-based stevia sweetness. Whether you are using the All-Purpose, Brown, or Confectioners Sweetener, they measure cup-for-cup like sugar in your favorite seasonal baked goods! 

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
