Chocolate and Butterscotch Mousse Cake

I know you’ve hardly exhaled from holiday baking and here I am pushing a chocolate and butterscotch mousse cake on you. But think of it as me gearing you up for a Valentine’s Day dessert with this six-layer chocolate cake that’s built on alternating layers of chocolate and butterscotch mouse.

For those on detox or diet, bookmark this. For the rest of us, oh my gawd, let’s talk about this crazy good cake. The mousse is simple to make and light enough to provide a textural contrast against the cake without dissipating before it marries up with the cake crumb.

And hello butterscotch mousse! Why am I just now discovering you? Actually I never thought of butterscotch mousse. Butterscotch pudding-yes. Butterscotch mousse-I’m a new to it.

Guess what I’m obsessed with now? Uh, yeah, butterscotch. Although, I have to admit, I prefer homemade butterscotch, but to keep things simple for this recipe I used the butterscotch chips. As many of you know I’m a contributor over at Better Homes and Garden’s blog, Delish Dish, for those of you that don’t, hit the jump here to find this recipe over there.

    Please tell me you ate all six pieces that you cut for that photo – Lord knows I would have! Looks gorgeous and delicious! And the sprinkles around the outside are just the perfect touch for crunch.

    oh dear lord! I am making this for my husband’s birthday. I am sure it not be even half as pretty as yours but with butterscotch in it, I bet he won’t care for the look as much.

    May I ask a silly question please?
    How do you make the sprinkles stick on such a tall cake? I mean you can’t tilt the cake and stick them on , right?
    I tried to well “dust” a cake of mine with the sprinkles and well most of them fell and didn’t stick and I didn’t get the lovely “covered with sprinkles” look like yours and what I had been aiming for..any tips? “covering in sprinkles for dummies” ?

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
