Chili Cheese Dog Grilled Cheese

We are going totally obscene today with this  Chili Cheese Dog Grilled Cheese sandwich because it’s National Grilled Cheese Month. Not that I need an excuse, but I’m all in for anything that celebrates the awesomeness of grilled cheese sandwiches.

I don’t know what I’m more excited about the insanely drippy, oh-so-messy chili dog sandwich that I piled high with my Texas Red Chili recipe, Nathan’s Famous Hot Dogs, crispy onions and pan seared jalapeños or the Fruity Fries. The latter being something I came up with the for the kids. My boys love fun spins on everyday food.

And if you can believe it, no one has coined Fruity Fries to this fun way of serving fruit. Yay, to an original idea. But if you hear otherwise, please let my ego float on this happy bit until Friday. It is carrying me through the week. Ha!

Chili Cheese Dog Grilled Cheese | Bakers Royale

Now that you have your healthy alongside the unhealthy—go for it—make this combo: Chili Cheese Dog Grilled Cheese and Fruity Fries! Enjoy.

Chili Cheese Dog Grilled Cheese

Chili Cheese Dog Grilled Cheese

Yield: Makes 1 sandwich

Ingredients

  •  
  • 2 slices bread
  • 2 tablespoons mayonnaise
  • 1/3 cup Texas Red Chili or your preferred chili
  • 2 hot dogs, cut in half horizontally ounce prosciutto (about 2 slices)
  • 1-2 ounce extra sharp cheese
  • Optional - pan seared jalapeños and green onions

Instructions

Heat cast iron pan over medium heat. Spread a tablespoon of mayonnaise on one side of each piece of bread.

On the other side of one piece, spread half of chili, layer with half of cheese, place hot dogs - cut side on down, layer with remaining chili and cheese. Add jalapeños and green onions if using.  Top with remaining slice of bread, mayonnaise side up.

Cook until bottom is golden brown, about 4 minutes. Flip sandwich and cook second side until golden brown, about another 4 minutes.  If sandwich is too messy to flip, grill remaining piece of bread separately then place on top of sandwich. Serve immediately.
