Cantaloupe & Basil and Watermelon Berry Mint Sorbet

It’s been a while since I’ve taken a 7-day break from blogging. And you know what it’s clarified? It clarified that I obsess—a lot and I suffer from a little bad faith (and I don’t mean in the religious sense). That’s right, I had a week long battle with my annoying self.

In the background of that, I did a lot of Instagramming to try to combat the ebbing creativity. If you follow me there, then you know I go through these manic periods of shooting a lot to almost none. Which by the way, dear friends, PLEASE tell me when I write maniac instead of manic. Because I’m pretty sure given the two, manic is the lesser one. (Of course I’m viewing the two as wholly separate of one of another rather than one being a derivative of the other). For real—look, “manic” even has one less letter.

Alright, never mind the shoddy logic on that one, because here’s what I can admit and many of you know—I’m hyper critical of myself. Easy to admit, much harder to change. So last week’s long hiatus—you know where it led me? It led me here, rationalizing and explaining myself.

As I said bad faith—I’ll get there though, and when I do, that annoying self will be giving me a high-fiving goodbye. The upside of all this back-forth rattling around in my head is at least it’s getting too crowded for a creative funk, so yay to finding my way out of that one.

    When it comes to not trusting ourself I can say I rank pretty high…. Lol sometime I just don’t know how to stop my brain working so hard on criticizing me and let it work on being happy about me…. It seems like a never ending effort..
    This looks beautiful, as always I’m loving the pics, the colors, the light everything from scoops to sorbets…

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
