This Mother’s Day, what special thing are you going to do for your mom? Well, I’ve got you handled on this one (at least partly).

How about some decadent cake truffles and chocolate covered strawberries—a little something mom probably wouldn’t do for herself, so you should definitely order these up from Shari’s Berries.

If you are a regular reader around here, than you know how much I adore my MIL, Teri. I could go-on and on about her giving spirit, her kind heart, her endearing quirkiness and how she has supported me and brags about me like I’m her own daughter—seriously, how lucky am I?

I always tell Matt, I’m so fortunate to inherit her as a mom by way of our marriage and blessed that she is a friend; and so happy that she’s the “Gramzzzzz” to my kids.

Did I say I wouldn’t go on and on about her? I lied. I can’t help it. I love bragging about her. And this Mother’s Day, I’m going to celebrate her with a lot of love, some cake, and of course a bit of indulgences that she wouldn’t do for herself—chocolate covered strawherries!

    I feel the same way about my MIL! She is basically the most wonderful Woman I know. And, my mom isn’t reading this, which makes it ok 😉
    Shari’s Berries are the best, and these are the PERFECT Mother’s Day gift to send my MIL…who lives 1 million miles away!

Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
