I’m  rolling through this week with one dessert after another. It might be a manic period or a start of a new trend. Whichever it is, I’m not making a declaration of it, being that all my other ones have immediately failed or the trend goes away when I do.

Yeah, I know–weak.  But we’re all friends here, so let’s move on and talk about today’s brownie ice cream cake.

It’s a super easy show stopper that will make you a hero. Hit the jump here to Brit+Co to see the step-by-step pictures to making this. Small note: Yes, this recipe is highly adaptable, but before you go messing about, let me say—don’t skip the Pirouline cookies. They make this dessert. You can use the dark chocolate variety or the hazelnut. Both are killer and provide a nice crisp texture and a good bite of flavor. (For the record, I’m not being paid by them. I just love their product)

    This is killer dessert as you said. I never though I would say this but I think I have found a new cake to replace my traditional ice cream pie cake at pot lucks.
    I can not believe you though of this, Genuis!

    ugh. ice cream cake. is there really anything better? when i turned 6 my mom purchased this extravagant $12 per person cake, and i was so upset because i just wanted a baskin-robins ice cream cake. i’ll be sure to this recipe before the end of summer!

    Naomi, I think you may have outdone yourself with regard to frozen desserts! All of my favorites are here…chewy brownies, yummy Moose Tracks ice cream & crunchy Pirouline hazelnut cream-filled cookies (or chocolate, but those hazelnut cream-filled are mighty tasty and so addicting!). Apple Spiced Cake 
Serves 12 

3 cups (14 oz.) self-rising flour
1 ½ teaspoon baking powder
1 teaspoon baking soda
4 teaspoon ground cinnamon
2 teaspoon ground ginger
1 teaspoon fresh grated nutmeg
1/4 teaspoon ground cloves 
3 eggs
1 cup (6.25 oz.) Truvia Sweet Complete Granulated All-Purpose Sweetener 
1 cup (5.75 oz.) Truvia Sweet Complete Brown Sweetener 
1/2 cup buttermilk
1 tablespoon vanilla extract
3/4 cup vegetable oil 
1 1/2 cups (5.5 oz.) peeled and shredded granny smith apple, about 2 large

Heat oven to 350 degrees F. Lightly coat a 10-12 cup bundt pan with non-stick spray. Set aside. 

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and cloves. Set aside.

In a second large bowl, add the eggs, and beat until combined. Add both the Truvia Sweet Complete Granulated All-Purpose and Brown Sweeteners, whisk until fully incorporated. Pour in buttermilk, vanilla extract, and vegetable oil, whisk until combined. 

Fold dry ingredients into the wet until smooth. Add the grated apples and fold until just combined. 

Pour batter in prepared pan and bake for 45 minutes or until a cake tester comes out free of wet batter. Transfer cake to a wire rack and let cool in the bundt pan for 20 minutes. Unmold cake and let cool completely on a wire rack. Before serving, dust with Truvia Sweet Complete Confectioners Sweetener. Enjoy outside with a seasonal beverage!
