Brisket and Brie Melt

April is a big month around here, it’s National Grilled Cheese Month and it’s also the start of the basketball playoffs. Couple that with a house full of sport-watching boys, food blogging parents and you’ll understand why I’ll be cranking out game day food for the next 30 days (and pretty much until the championship game). To start things off, I’m making this Brisket and Brie Melt.

This grilled cheese sandwich—I’m obsessed! It has all my favorite things: it’s sweet and salty, multi-textured and it involves one of my favorite breads: eureka! Organic Bread. I used the Saaa-Wheat variety for this recipe since it has a slight sweetness. But along with that, I love how eureka! Organic Bread is: non-GMO verified, Certified USDA Organic and has no high fructose corn syrup, no artificial flavors. I’m totally subscribed to eureka!’s “Don’t be Bland” ethos. Seriously, better-for-you food doesn’t have to be boring. Yay to that because no one wants to sacrifice taste to eat better.

Especially my boys, boys of food bloggers, boys who have cultivated a taste for a very wide range of food. Boys who have learned to critique, pick apart and pull apart a dish as adeptly as a Chopped judge (well, minus the toddler, who prefers red-face screaming and crying over words). This recipe was met with very little feedback, the only one with any real consequence came from my 10-year-old asking, “Where are the chips?”.

Brisket and Brie Melt

Yield: 1 sandwich


  • 2 slices bread
  • 2 tablespoons mayonnaise
  • 1/3 cup chopped brisket
  • 1-2 ounce sliced brie cheese
  • Optional - pan seared jalapeños and green onions


Heat a heavy-bottom pan over medium heat. Spread a tablespoon of mayonnaise on one side of each slice of bread.

On the other side of one slice of bread, layer with half brie, brisket and remaining half of brie.  Top with remaining slice of bread, mayonnaise side up.

Cook until bottom is golden brown, about 4 minutes. Flip sandwich and cook second side until golden brown, about another 4 minutes.
